2 pizzas; 25-30 cm wide

Preparation; 25 min plus resting times

Cooking; 20 min

Ingredients Needed:

1 Pizza Dough

Basil; torn, roughly a handful

Oregano leaves; chopped, small handful

675g of cherry tomatoes; these will need to be cut in half

250g grated mozzarella cheese

Semolina flour

Salt

Black pepper; freshly ground

The first step in making this pizza is to preheat your over to 200 degrees C. After you have let the oven heat a little bit oil up the bottom of two pizza blocks or stones and let them preheat at the bottom of the oven. Take the dough that you have made and knock it down from the sides of the container that it was in. Knead the dough for two minutes or until all the air is released. Cut the dough into two equal amounts.

Sprinkle some flour onto a surface, marble preferably, and roll out the dough into two very thin circles that have a diameter of roughly 25-30cm. The dough should be very thin. Carefully transfer the base to a cold, not warmed, baking sheet that has been generously floured with the Semolina flour.

Evenly distribute the basil leaves over the pizza, the half cut cherry tomatoes, the chopped oregano, salt, pepper, and finally distribute the mozzarella cheese over the entire pizza. Remove the blocks or stones that were preheating in the oven and transfer the pizzas over to them. Bake for 20 minutes until cheese is melted and bubbling and the tomatoes have softened.
