Bharwa shimla mirch

Ingredients:-

5 capsicums

1 onion (finely chopped)

3 medium size boiled potatoes

Salt to taste

1/4tsp dry mango powder

1/4tsp turmeric powder

1/2tsp red chili powder

1 finely chopped green chilies

1tsp coriander powder

Cooking oil for frying

Preparation and method-

Heat 2 tbsp oil in a pan add cumin seeds when hot. Wait till cumin seeds start cracking.

Add chopped onion and green chilies a saut them until brown.

Add boiled mashed potatoes in a pan.

Add all the spices and mix them well.

Put it on the heat for 5-8 minutes till potatoes absorb all the masala.

For bharwa shimla mirch

Wash the capsicums and pat dry them with a towel.

Slit the capsicums. Remove all the seeds and pith. Trim bottoms very slightly.

Stuff each capsicum with the mashed potato mixes. Press down and top up to ensure they are well filled.

Heat oil in a pan and fry the stuffed capsicums

Garnish the bharawan shimla mirch with grated paneer, chopped coriander leaves and thinly sliced rings of tomato. Serve hot.

You can also bake the stuffed capsicums

Preheat the oven to 350F .keep the stuffed capsicum in a baking pan and keep in the oven for half an hour.
