Omelets are a great breakfast optionOmelets are a great breakfast option. Eggs are an excellent source of protein, vitamins, and other nutrients such as lecithin. If you buy free range eggs, they will also contain omega-3's which have a host of health benefits. One of the great things about omelets is that you can make them in such a variety of ways. That way, you can have a healthy, high protein, low glycemic breakfast every day without getting bored.

Here are two great Omelet recipes you can try out if you're looking for something different for breakfast. Feel free to play with the ingredients a little to make the perfect omelet for you.

Broccoli Cheese Omelet

Ingredients:

Nonstick cooking spray

1 chopped onion

10 oz. frozen broccoli, thawed, chopped and drained

6 egg whites

1 egg ( you can also subtract 2 egg whites and use 2 whole eggs)

1/4 cup skim milk

1/3 cup shredded 2% cheddar cheese

Cooking Directions:

Coat a large skillet with nonstick spray. Cook onion over medium-high heat stirring occasionally for 3 minutes or until tender and light brown. Add broccoli and cook for 1 minute, reducing heat to medium. Whisk together eggs and milk in medium bowl, and pour mixture over vegetables. Cook, lifting eggs at edges and tilting to cook egg mixture on top, for 5 minutes or until bottom starts to brown and eggs are almost set. Fold omelet in half; cook 2 minutes or until eggs are set. Remove skillet from heat, sprinkle with cheese, cover, and set aside for 1 minute until cheese is melted.

Mexican Omelet

Ingredients:

3 eggs

1/2 cup chopped onions, green peppers, red peppers, mushrooms

1/4 cup of your favorite salsa

Cooking Directions:

Place eggs and vegetables in skillet. Cook omelet as described as above until it's done. Top with a sprinkle of cheese and salsa. Ole!

Omelets can take some practice to get just right, but keep trying. In the end, you'll have a fantastic option to spice up breakfast and add variety to what can sometimes be a bland meal.
