Sushi is not sushi without the carefully prepared wasabi. It is the wasabi that gives the sushi the extra kick that it needs in order to excite the palate. Also known as the Japanese horseradish, wasabi is a spicy Japanese root that is commonly mixed with soy sauce although some sushi lovers put it directly on the sushi.

Commercial wasabi is commonly available in powder form although there are some that are in paste form. If you would like to make your own wasabi dip, it is recommended that you go for the powder form. On the other hand, if you want to make a fresh wasabi on your own, you would need to skip on commercially available powder-or-paste wasabi and go for the little rhizomes. In making fresh wasabi on your own, you need to have a number of paper towels, 1 or more whole rhizomes of fresh wasabi, ginger gratings, and a paring knife.

The first thing that you need to do when preparing fresh wasabi is to secure the needed fresh rhizomes. You can usually order them from various online stores or you can visit your local sushi supplies store and check with them if they have fresh rhizomes. Be reminded, however, that you might have to go through several stores before finding one that sells fresh wasabi since this type of root is not indigenous to the US.

Once you already have your fresh wasabi, you need to peel off the outer skin removing even the knobs where the branches used to be attached. Most sushi Plantation chefs who make wasabi from fresh rhizomes make use of a paring knife or a peeler to remove the skin. Once the skin of the wasabi has been removed, you would have to grate the wasabi using a ginger grater. Make sure that you use circular motions when grating.

Form a ball out of the grated wasabi and let it sit for about 15 minutes in order to enhance the flavors. After this, you are ready to serve the fresh wasabi to your guests. Keep in mind that your wasabi will not look the same as the ones you see in the various sushi Sunrise restaurants.

When preparing your own fresh wasabi, you have to keep yourself from rubbing your eyes. Most sushi Sunrise chefs would tell you that Wasabi is an extremely spicy dish and can cause irritation of the eyes and the skin if not handled properly.
