You may know about Icewine, a wine produced from frozen grapes that is typically very sweet and thick and is most often consumed as a dessert wine. But have you heard of Springwine? This is a new category of wine produced from the birch nectar or birch sap that is harvested from birch trees during the spring of the year.

In the fall of the year, a birch tree loses its leaves which then decompose over the winter resulting in the essential nutrients from those leaves being stored in the ground below. In the spring, as the snow melts, the tree will absorb these vitamins and minerals through its root system in the form of sap and this sap will flow through the tree providing the nourishment required for growth and reproduction. The sap is naturally filtered through the tree as it runs upward from its roots system, through the trunk and branches, to the buds at the ends. It is during this time period that Sap World taps the tree to collect from 5 to 10% of the sap, with no harm to the tree itself, to be utilized for the production of our birch sap wine or Springwine which we have named Lady of the Woods

Spring is a season of new birth, rejuvenation, and new beginnings. We at Sap World like to think that our wine is a new beginning as well, for taste, enjoyment, happiness, and health.

There are large birch stands located throughout the Boral Forest, but the birch trees used by Sap World are unique due to our location in Newfoundland, an island located off the East coast of Canada, with its pristine, wild, natural, and relatively untouched, unpolluted forest environment.. By harvesting wild birch sap using state of the art collecting methods, we provide the highest quality products available today.

Through nutritional content analysis and secondary research, we have discovered that our wine is considered an Excellent Source of or Very High In Manganese, containing 35% of the recommended daily intake per every 125ml serving. Manganese is a trace mineral that is present in tiny amounts within the human body. It is found primarily in bones, the liver, kidneys, and pancreas. Manganese helps the body form connective tissue, bones, blood clotting factors, and sex hormones. It also plays a role in fat and carbohydrate metabolism, calcium absorption, and blood sugar regulation. Manganese is also necessary for normal brain and nerve functions. Finally, Manganese is a component of the antioxidant enzyme superoxide dismutase (SOD), which helps fight free radicals throughout the body.

This wine shows clear and bright in the glass; provides a delicate fragrance of soft apple and pear; sits well in the mouth with pleasant acids balancing the evident fruit sugars; persistent flavours of ripe pear, Mandarin orange, and Delicious apple blend harmoniously and without bitterness.

Superb by itself, this wine will pair well with less sweet desserts such as shortbread, vanilla crme brulee, and almond fingers.
