As for the reason why men's sterling silver rings are so popular, I would imagine it is a matter of sheer economics. Men can buy a sterling silver ring for a lot less money than just about any other metal, and still be confident they are wearing a high quality ring.

The remaining 7.5% is made up of other metals, usually copper, but other metals have been known improve the overall quality of silver.
