Its unusual to see the golf crossover between foodies and golf fans, but when u think about it they are a very similar demographic. I asked Emeril about this, and he agreed that the palate of the golfing fanare as discenringas they are for a plush golf course.

I also asked about any change in demand as the economy slowed, and he said " That it was not so much about price as it was about variety where they could sample more items", he also said that he saw the shift in demand coming to smaller plates and unique dishes long before the economy turned. When asked about any exciting projects he was looking forward to for 2011 he mentioned expanding his Bethlehem, PA restaurant's with an un-named addition for 2011.

Lagasse initially gained fame in the culinary world as executive chef of Commander's Palace. After leaving Commander's he opened his first restaurant, Emeril's, in New Orleans, Louisiana, in 1990. It was designated "Restaurant of the Year" in Esquire magazine of that year. Lagasse is mainly known for his emphasis on Creole and Cajun cooking styles. Indeed, many of his restaurants, as well as his corporate office, Emeril's Homebase, are located in New Orleans. Lagasse is the executive chef and proprietor of thirteen restaurants.

It's great to see crossover in Sports celebrity and great entertainers like Emeril, they have acool demo tent set up here at the golf course amongst the corporate tents and wandering golfers. Viking and thePGA seem to be a perfect match here in Madison....and Emeril brings some spice!!!
