While most of the time I like experimenting with different flavors and attempting to create polished dishes, there are times when all I went is something that reminds me of my mother. This is the best example of that. Spaghetti Pie was always a childhood favorite of mineto me, there was nothing more awesome that spaghetti in pie form, and to this day, I love it.

It's super easy to put together, freezes really well, and it's very adaptableuse store bought or homemade tomato sauce, add in a layer of spinach for more flavor and nutrition, add ground turkey or beef to the sauce, experiment with different cheesesthere are a lot of different directions you can go with this. Another plus is that it's a great meal to make for kids, assuming all kids think the idea of spaghetti pie is as cool as I thought it was.

Alena's Spaghetti Pie

Ingredients - Serves 6-8:

6 oz spaghetti, cooked and drained

2 tablespoons olive oil or butter

2 large eggs, well beaten

cup parmesan cheese, divided

1 cup ricotta cheese

1 cup pasta sauce

cup shredded mozzarella

Directions:

1. Preheat oven to 350 degrees.

2. Lightly grease a 10" pie plate. Set aside. Toss the hot spaghetti with oil or butter. Combine eggs and cup parmesan cheese and stir into spaghetti.

3. Pour mixture into prepared pie plate and form into a "crust." Spread ricotta over bottom of the crust and top with sauce. Bake uncovered for 25 minutes. Top with mozzarella and bake 5 minutes more, or until cheese melts. Remove from oven and sprinkle with cup parmesan cheese.

4. Cool 10 minutes and cut into wedges.
