Baked Vegetable Samosa
Baked Vegetable Samosa

the triangle shaped pastry parcels are baked in the oven.

Serve as a snack or for picnics.

Ingredients

Ingredients for cover(pastry)

Wheat four 1 cup

Whole wheat bran 1 cup

Oil 3-4 tablespoons

For filling

Kasuri methi 1 tsp

Whole cumin seeds (jeera) 1/4 teaspoon

Onion finely chopped 100gms

Cabbage chopped 100gms

Cauliflower chopped 100 gms

Spinach chopped 100 gms

French beans 100 gms

Ginger 1 tsp

Ground cumin (jeera) level tsp

Green chilli finely chopped 1(optional ingredient)

Potato peeled, partly cooked and diced 1/2 medium

Vegetable oil 2-3 tablespoons

Salt 1 pinch

Oven temperature 200C

Method:

1.Put the oil in a large saucepan and fry the onion and whole cumin for 5 minutes

on a low heat.

2.Add the chilli, ground cumin . Fry for a further 2-3minutes.

3.Add the french beans ,cauliflower, cabbage, spinach and potato, continue to cook

adding a little water if too dry.

4.Allow to cook slowly for 15-20 minutes withthe lid on. When the veg are just cooked add salt. Cook for a further 2 minutes.

5.Place in a cool place for filling to get cold before making the samosa.

6.Take the dough , roll it into thin sheet of size of a tea saucer.Cut into half.

Take one of the strips and Brush little water on it . Place 2-3 teaspoons

vegetable mix at the end of the strip closest to you. Fold over in triangles

sealing the end with water.

7.Place on a baking sheet and repeat until pastry and filling are used up .Brush each samosa with olive/any veg oil and bake for 10-15 minutes at 200C or until golden brown. Serve hot or cold as a snack or starter to a meal with chutney.

Make sure the vegetable mixture is cooked thoroughly because the pastry cooks

quickly not allowing for any additional cooking of any partially cooked

vegetables.

Add chopped mint to the vegetable mixture when cold.
