These potatoes are oven roasted in a creamy sauce that's fat free. If you thought that making a cream sauce without fat was impossible, read on!

This recipe serves 2 for dinner.

Oven Roasted Potato Recipe Ingredients

6 potatoes, scrubbed and chopped

1 zucchini, chopped

Fresh dill, chopped - or about 2 Tbsp dried

Nutritional yeast, 1 Tbsp - optional

Pinch of sea salt & black pepper

Oven Roasted Potato Recipe Directions

Bring a pot of lightly salted water to a boil and cook the potatoes for about 10 minutes, until they are just barely cooked. Drain the water off and let them dry slightly, then put them in a baking dish.

Pick about half a cup of the softest potatoes, and put them in a separate bowl, with some water. Mash or blend the potatoes to make a creamy sauce. Add dill (or another herb if you prefer) to your taste, and salt, pepper and nutritional yeast if you are using it. Taste the sauce, and it should be slightly salty. It won't taste salty once it bakes into the potatoes.

Add the raw zucchini, chopped about the same size as the potatoes, to the baking dish and pour the sauce over both, stirring to coat. Put the dish in the oven for 20-30 minutes at around 350 degrees F. After about 15 min, take the dish out and stir the vegetables. Bake until the zucchini are soft.

These potatoes are excellent as a meal, if you serve them on top of a bed of fresh or steamed greens, or as a side dish. Using only 5 ingredients, this recipe makes a great base from which you can experiment with different herbs and flavors. A bit of lemon juice and some thyme would make an excellent variation, and feel free to go from there.
