You could call quinoa a super grain but in actuality, it's not even a true grain. It is actually a seed from a leafy plant that is distantly related to spinach. It's high in protein which includes the amino acid lysine which makes this protein complete. Quinoa provides much more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins: B6, niacin, and thiamin. It's also a great source of magnesium, zinc, copper, and manganese, and has some folate (folic acid). Do not you believe that including this ingredient into your diet could be beneficial for you? Warm and Nutty Cinnamon Quinoa(serves 4)
1 cup coconut milk
one cup water
1 cup organic quinoa, (rinse thoroughly prior to cooking)
2 cups fresh blueberries or rasberries
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans or walnuts
Combine milk, water and quinoa in a medium saucepan. Let it come to a boil over high heat. Decrease heat at medium-low; cover and simmer 15 minutes or until the majority of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon (you are able to also add a little stevia to sweeten); transfer to four bowls and top with pecans or walnuts.
