There is a bewildering array of pizzas available in the world. America is a country where pizza has evolved simultaneously in several parts of the country. This has produced similar yet distinct products in each part of the country. The New York pizza is the most famous of these regional varieties.

As its name suggests the New-York style pizza originated in New York City. Pizza was first sold in New York in the early 1900's. The main distinguishing feature of a New York Pizza is its thin hand-tossed crust that is made of high-gluten flour. People say that a New York Pizza has a distinct flavour, which is due to the minerals in the water used in New York city. No malt, sugar or other products are added to the dough, it is just flour, yeast, water and salt.

A traditional New York pizza is 18 inches in diameter and is cut into 8 slices. It is sold as whole pies or by the slice. In New York it is served with a choice of either, dried red chilli, garlic powder or oregano. Mozzarella cheese is the only cheese to be used on a real New York pizza.

In New York, you can buy a variation of a New York pizza, which is called a Sicilian. The base is made of the same ingredients, but is thicker than a traditional New York pizza base. It is also sold cut into squares.

The traditional New York pizza is now also popular in most of the North-eastern states. Outside of New York, it is sometimes referred to as an Italian pizza. Many pizza chains have New York pizza on their menus, but because they do not have wood ovens these pizzas are poor imitations of the real New York pizza. The crust does not get crispy enough, because the oven does not get hot enough. Pizza chains also tend to use chilled tomato sauce instead of sauce which is at room temperature, this results in a soggy base.
