From your privacy settings, click on the 'Customize settings' link.

You can then go to a particular area of your profile that you wish to hide from this certain person. Click on the drop-down box and select 'customize' - you can then enter in the name of the person you wish to hide the information from and click 'save setting'.

Consequently, you will be able to review what this person can see by clicking 'Preview my Profile'. If you fill in their name, you will be able to see exactly what they would be able to see if they were to look at your profile.
