You might just want to tell them to always get your verbal permission before they mow, and that if they don't check with you when you need them, that you will call them.

Regardless of whether you do the work or a lawn service does it, the grass should not be cut too short. It will require more work and money to resist the temptation to crop it really low, but it will give you a much more healthy lawn. This is because grass roots grow deeper and weeds grow less.
