The bottom line is that a witnesses testimony about what they were looking at when they fell is factual testimony that should be admissible. If after their deposition, they come up with a new theory about why they fell, i.e. looking at some other safety issue, than a defense attorney may try to keep that testimony out if it was not stated in deposition.
