You will add the chicken to steaming jasmine rice. To add more flavor simply grab a couple of items from your produce bin. You can add diced tomatoes, chopped garlic, sliced green or yellow onion, zucchini, green or black olives and crumbled feta for a little zing. You vegetables can be sauteed in butter or garlic once they have been cut to size. Toss all ingredients together and add salt, herbs and other spices to taste.

For heartier fare the chicken can be cut, cooked in a light drizzle of olive oil and combined with sauteed mushrooms and sliced garlic. A thin but flavorful gravy can be created with marsala sauce, a dash of white wine, and cracked black pepper. Homemade mashed potatoes and steamed zucchini will round off this delightful and inexpensive feast.

There is in fact no real limit on what you can do with a few simple ingredients and chicken that is properly cut. You can use stewed tomatoes of chicken stock as a soup starter, your sauteed, grilled or steamed veggies, jasmine rice and cooked chicken can simmer within. Or you can cool your chicken, combine it with grated parmesan and romano cheeses, chopped romaine lettuce and homemade croutons. This can be tossed with Caesar dressing and served on a hot day.

With a small bit of imagination you can turn quick chicken recipes into wholesome, delicious fare for your family. You can even trim your grocery bill a bit, when you implement techniques that enable you to decrease the household meat consumption. This way, everyone feels healthier, and you have more money in your wallet to boot.
