Get a baking pan and grease it. Lay the bacons and roast for 20 minutes. In a large bowl, mix the arugula, walnuts, apple, cranberries, and blue cheese. On another bowl, whisk the vinegar, orange zest, mustard, orange juice, maple syrup, salt, olive oil, and pepper. This will be your salad dressing. Once the bacon has cooled, chop them and add to the salad. Serve immediately.
