This definitely provides you with a higher level of security. When your documents are out of your site, there is nothing that you can do which will ensure 100% that the information contained in them will remain safe. Even if you have the shredding company sign a confidentiality agreement, it is not really a certainty of any kind that the information will stay protected.

Confidentiality agreements should still be enforced even if the company that you are dealing with is going to come to your location to shred your documentation. It should be a simple matter to have someone draw up a standard and complete confidentiality agreement for you. Have every employee that comes to your site with the shredding service sign one before they are allowed to work.
