The Maya made beverages from it, even going so far as to ferment sugars with the cacao bean and create an alcoholic concoction. The Aztec peoples also adopted cacao into their diet, associating it with their God of Fertility. Montezuma was responsible for introducing the Spanish to the cacao bean, when he offered some of their concoction to Hernan Cortez. Europe was using chocolate in commercial production by 1585, when it was regularly shipped from Mexico.

Specialized chocolatiers are where chocolate connoisseurs look for the best concoctions of the treat, and not in the form of dried powders or in general stores.. When one considers buying a good suit, one goes to a tailor; one goes to a butcher for good meat cuts; likewise, the chocolatier is our choice for quality chocolate. Naturally, one would want to try a bit of authentic chocolate, while vacationing in the country that is home to the first chocolatiers?

In Playa del Carmen there is a company dedicated to producing authentic premium chocolate from Mexican cacao. Ah Cacao Real Chocolate uses cacao grown in the region, and makes their chocolate in the old Maya tradition. The company has three stores, all selling chocolate drinks, desserts, coffee and other products. Their chocolate is so excellent, it was even featured on Rachel Ray's popular television show, Tasty Travels.
