Buffalo Chicken Dip With Red Hot Sauce

This is a popular staple during the American Football championship season

. Buffalo wings are called so because they were initially created in Buffalo, NY. Conventionally Buffalo wings are deep fried, however, if you do not have a deep fryer at home, but want to prepare a meal of Buffalo wings, it is ideal to use a recipe that requires the wings to be broiled after they are marinated in a spicy sauce.

Ingredients

Wings

2 lb chicken wings (about 12 wings)


3 Tbsp butter, melted

4 Tbsp bottled hot pepper sauce

1 tbsp paprika

tsp salt

tsp cayenne pepper

tsp black pepper

Celery sticks (optional)

Blue Cheese Dip

cup sour cream

cup crumbled blue cheese

cup mayonnaise

1 tbsp white wine vinegar or white vinegar

1 clove garlic, minced

Method

Wings

1.Cut off wing tips. Either discard or keep them for other use like preparing stock. Chop wings at the joint. Place chicken wing pieces in a plastic bag. Set aside. Note: when chopping uncooked chicken, it is best to use a cutting board reserved just for chopping uncooked chicken. clean thoroughly when finished. Do not allow raw chicken drippings to come in contact with other food.

2.Make a marinade by mixing together the melted butter, hot pepper sauce, paprika, salt, cayenne, pepper, and black pepper. Pour all except 2 tablespoons of the marinade over the chicken pieces in the plastic bag. Keep back marinade for brushing after the pieces are removed from the oven. Close bag and let marinate at room temperature for half hour. When marinating is complete, drain marinade and throw away bag.

3.Put wing pieces on the rack of a broiler pan. Broil 4 to 5 inches from the heat source for about 10 minutes on each side, until chicken is tender and no longer pink. Remove from oven and brush with reserved marinade.

Serve with Blue Cheese Dip and celery sticks.

This recipe makes about 24 pieces (approximately 12 appetiser servings).

Blue Cheese Dip


Combine dip ingredients in a blender or food processor. Blend or pulse until smooth. Cover and chill for up to a week.
