Some people don't drink coffee because they believe it will upset their stomach or cause indigestion because it is to acid. Part of the acidity, usually, is the tartness of a fine coffee. Such aging reduces the acidity and will typically increase the body or flavor. So I suggest you shop for a low acidity coffee. They are out there.
