Coffee began to get more attention when the Arabs began cultivating it in their peninsulas around eleven hundred AD. It is speculated that trade ships brought the coffee their way. The Arabs started making a drink that became quite popular called gahwa--- meaning to prevent sleep. Roasting and boiling the bean was how they made this drink. Coffee is the second most traded commodity in the world and is graded in a similar manner as wine. This event is called a "cupping" and has a set of strict standards. Winning a cupping is very prestigious and has a direct effect on the prices a coffee grower can get for his crop.

The caffeine in coffee has often been a source of concern for many. Most people have problems sleeping when they drink coffee right before bedtime. Others will drink coffee to give them that boost of energy caffeine provides. Some even feel their heart rate increase if they drink too much coffee.

Coffee is Porous. It is exactly this feature that allows us to use oils and syrups to flavor coffee beans for those who enjoy gourmet flavored coffees. For this same reason, coffee can also absorb flavors and moisture from your freezer. Arabica coffee arrived in Mexico at the start of the nineteenth century from the West Indies. Today, Mexico ranks among the world's top coffee exporters. Most Mexican coffee is processed by the wet method to ensure better acidity and body. Mexican coffee is graded based on the altitude where it is grown. Coffee specialty shops are often a franchise business owned by major corporations. However, many of these fine specialty coffee shops are privately owned and ran by smaller groups of people. The benefits of both the corporation and the small business are completely different. I know I enjoy the small business coffee specialty shop mush more than the larger franchise. Customer service, quality, and down-home comfort all while enjoying that awesome cup of gourmet Java.

Coffee drinks of all types, be it plain coffee or espresso or latte or cappuccino or some other specialty coffee beverage, are prepared from the beans of the coffee plant. The coffee plants, the seeds (beans) of which yield coffee, are grown on a large scale in various parts of the world. The primary concern of all coffee lovers being the flavor of the drinks, special attention needs to be given to ensure that the best flavor is obtained from the coffee beans. This is of crucial importance in case of preparation of espresso, cappuccino, latte and all other special coffee beverages. The superior coffee makers and espresso machines can also deliver the best results i.e. brew the perfect drinks only if the best flavored ground coffee beans are used.

On the negative side, coffee also has extremely high caffeine content. Caffeine can provide a sudden boost of energy, but can also cause long-term health ailments if consumed too much, such as a heart rate increase, high blood pressure, or an irregular heartbeat. Coffee is also highly acidic, which can cause a decrease in oxygen levels in the body and a build up of lactic acid.
