"Raw in 30!" Yes, it is possible to experience better health within 30 days with a raw food diet. In fact on the first day you choose fresh, raw food over chemical-ridden, processed food, you have made a healthy choice and a great start. I know many of you think that you could never make the change from your present diet to a raw food plan in just one month. But you can go "raw in 30!"
Many people feel overwhelmed by the prospect of a complete change in their eating habits. A total raw food diet seems like an impossibility. Yet the truth is that a healthy diet does not have to consist of 100% raw food. I am living proof of that fact. I enjoy a little lean organic chicken or a serving of 'fresh' fish.
How Much Raw Food Is Enough?
Following a regular 'partial raw food diet' can be a significant benefit to your health. Now I am not referring to a 'partial' raw food diet with 50% of your meals being greasy French fires and milk shakes with 74 chemicals. Raw food should account for most of your diet and no part of the plan should include processed foods. If your 'partial raw food menu' includes raw food, lean chicken, and fresh fish, you have planned a healthy diet.

In the film, Dr. Joel Fuhrman, a board-certified family physician, elaborates on eating a 'less than 100%' raw food diet.
A 100% raw vegan diet is unnecessary for excellent health. Obviously, raw foods are an important part of an optimal diet. Any diet that doesn't contain a significant proportion of raw plant foods isn't an optimal diet.
Organic Is Better
An organic raw food diet is always the best choice. Carrots have terrific health benefits but not so much if grown with the help of harmful fertilizers. Foods grown with chemicals will not provide the proper nutrition and add dangerous elements to your diet.
Raw Food Diet Real Benefits from Enzymes
A raw food diet allows for flexibility and the benefits are beyond belief. Food enzymes are found naturally in raw, uncooked foods. These enzymes help in digesting foods so that nutrients can be absorbed into the bloodstream. Enzymes break down and remove old, unhealthy cells and tissues from the body. Enzymes support natural detoxification. When enzyme stores are low, unhealthy cells and tissue can remain in the body and cause havoc.
High Heat Destroys Enzymes
Cooking at 118 degrees Fahrenheit or above can destroy the enzymes in our food. With the Western diet of well-done steaks and grilled hamburgers, it is not surprising that many North Americans do not get enough enzymes in their diet. As well, a diet of overly-cooked foods can have an adverse effect on immune response. The body will experience digestive leukocytosis - an increased count of white blood cells - a response mimicking a reaction caused usually by infection, trauma or, toxic chemicals.
At one time, doctors thought that this increased white blood cell count was a normal reaction to eating. Eventually, researchers noted that the extra white blood cells did not appear in people who ate raw, unaltered food. Foods that were not refined or overheated caused no reaction. The body receives raw foods as friendly foods.
Bad Foods Worst Choice
Although nutrition is lost through excessive heating, the cooking process is not as bad an enemy as the wrong choice of food. For example, a fresh banana is a healthy choice. If cooked at high heat to make a sauce, the banana loses some of its nutritive value and healthy enzymes. Yet the heated banana still beats out a hot dog in the healthy choice department.
Cooking at high heat can take away value from good foods but bad foods have no value in the beginning.
Dr. Fuhrman clarifies this issue, "Many vitamins are heat sensitive. Twenty to 60 percent of Vitamin C is lost with cooking and 20 to 40 percent of minerals are lost in many cooking methods. We're in agreement that we should strive to eat a diet with lots of raw food, but we don't want to go so far to think that some cooked food in the diet is poisoning us.
