Delicious Homemade Pizza Dough And Sauce

Simple Pizza Dough

Prep time: 10 minutes

Total time: 1 hour, 20 minutes


For this recipe you will need:

3 - 4 cups all-purpose or bread flour (bread flour yields a crisper crust)

1 package instant dry yeast

1 cups water, warmed to about 43 degrees Centigrade

1 tsp. sugar

2 tbsp. + 2 tsp olive oil

2 tsp. kosher or Mediterranean sea salt

Mix 3 cups flour, salt, yeast and sugar in a food processor or stand mixer. Add water and 2 tbsp. of oil until the dough starts to form a ball. If dough is too sticky, add flour 1 tbsp. at a time until the dough firms up. If the dough is too dry, add water 1 tbsp. at a time until dough is elastic. Turn out dough onto a floured work surface and knead until it is smooth. Shape into a ball.

Oil a large bowl using the remaining 2 tsp. olive oil. Put the dough in the bowl and cover. Let rise in a warm place until doubled in size. This will probably take about one hour. This is an excellent time to make the pizza Fulham sauce.

Place the dough on your floured work surface and split in two. Cover each portion for ten minutes.

Customisable Pizza Sauce

Prep time: 10 minutes

Cook time: 35 minutes

For this recipe you will need:

Diced small Spanish onion

2 tbsp. olive oil (the fresher the oil, the better the flavour)

828 mL can pureed plum tomatoes

2 garlic cloves, chopped fine

2 tbsp. chopped fresh basil (you can also use dried basil, oregano and any other spices you like)

Pinch or two of red chili flakes, depending on how spicy you want your sauce

Fresh ground black pepper and salt

In a sauce pan, heat the olive oil over medium temperature. Add the onions and saut until soft, approx. 5 minutes. Put in chili flakes and garlic and cook for another minute. Pour in tomatoes and turn the temperature up. Cook the sauce, stirring occasionally, for about 20 minutes until it thickens. Add basil, pepper and salt to taste.
