The Bluefin fish lives for around 30 years but these days they rarely reach maturity and many young tuna are being netted and fattened up for sale before breeding has taken place. In Japan the love of Bluefin tuna is very high and they import around 90 per cent of their tuna from countries in Europe. This Japanese delicacy is the staple fish used for tuna sushi as it has beautifully tender, deep red flesh which looks very much like raw beef.
In Japanese cooking and sushi, tuna is a principal fish. In sushi it is used for a wide variety of dishes whether cooked or raw. You can get a selection of maki rolls and then there are the delicate strips of tuna used in sashimi and nigiri.
Dont feel you have to give up your tuna sushi though. There are plenty of species of tuna that havent been as affected and have healthy numbers.
