Coffee cake as the name implies is a coffee flavored cake. These cakes are light, rich and have a wonderful texture. Coffee cakes can be made with varied icings and taste particularly delicious when served straight from the oven. You can add your own choice of fruits and nuts to the coffee cake to make it even more interesting. It can be the perfect accompaniment on a particularly damp and rainy day. Here are some delicious and easy coffee cake recipes:

Coffee cake with Cinnamon and Sugar

Preparation time: approximately 15 minutes

Baking time: 30 minutes

Ingredients

2 cups flour

cup sugar

cup butter (softened)

2 teaspoons baking powder

1 cup buttermilk (fresh)

1 egg (slightly beaten)

teaspoon salt

teaspoon baking soda

For the topping

cup sugar

teaspoon cinnamon

Equipment

Baking dish (8" x 8")

2 mixing bowls (medium size)

Process

Preheat the oven to a temperature of 375 degrees. In one of the mixing bowls mix together the butter and sugar till you get a mix that is light and fluffy. Break an egg into this and beat it well in the butter and sugar mixture.Now add the cup of fresh buttermilk and mix this well. Set it aside after whisking all the contents well. In the second mixing bowl sift together the measured flour, baking soda, baking powder and salt.Now stir these dry contents into the wet contents in the mixing bowl and mix it all well till you get a thick batter. Grease the baking dish and spread the batter in this evenly. In a small dish take the sugar and cinnamon and mix it together. Now sprinkle this mixture of sugar and cinnamon on the batter generously.Bake this in the oven at 375 degrees for a period of 30 minutes. To check if the cake is well cooked you can insert a toothpick in the batter and if it comes out clean then the job is done.Serve this delicious cake warm. You can also make this cake a day ahead and this allows the flavors to mix well. You can also make this cake with toppings of brown sugar, cinnamon and chopped pecans.

Raspberry Coffee Cake Recipe

Preparation time: approximately 20 minutes

Baking time: 40 minutes

Ingredients

2-1/2 cups flour

cup sugar

cup butter

teaspoon baking powder

teaspoon baking soda

1 egg

cup buttermilk

teaspoon salt

cup raspberry preserves.

teaspoon vanilla

1-1/2 cups powdered sugar (confectioner's sugar)

Lemon juice

Equipment

Greased springform pan (approximately 9" round and 2"high)

1 mixing bowl (large)


1 Small bowl

Process

Preheat the oven to a temperature of 350 degrees. In the large mixing bowl take the flour and mix it well with baking soda, baking powder, salt and sugar. Now put the butter in the contents and mix. Make some space in the center of the contents and add the buttermilk and egg into the mixture and stir.Spread this batter in the greased baking pan. Spread the raspberry preserves on the dough. Leave a border of around 1-1/2". Bake this at the temperature of 350 degrees for 35 to 40 minutes. Cool the pan on the baking rack.Now in a small bowl mix the vanilla, powdered sugar and lemon juice so that a liquid of drizzling consistency is obtained. Remove the cake from the springform pan and drizzle this glaze over the cake. Serve warm.
