I recently cooked in a villa on the island for a delightful family who had a passion for gazpacho.

One day after dining at a local restaurant, the family informed me that the restaurants gazpacho was better than mine! Ah the truth hurts, but will out, so I am on a quest to perfect my gazpacho.

I went to the restaurant with 3 fellow cheffys, and have to agree their gazpacho was exquisite! Pooling our combined resources, we came to the conclusion that the gazpacho was enriched with allioli garlic mayonnaise.

So, in the meantime here is my latest version of Gazpacho.

2 Slices of rustic wholemeal bread crusts removed

4 Tablespoons olive oil

12 Ripe Tomatoes, blanched, peeled, deseeded *

l Cucumber, peeled,deseeded and chopped

l Red or White Onion small

l Long Green Pepper

l Teaspoon cumin (optional)

Parsley

4 Tablespoons red wine vinegar

little Allioli

Firstly soak the bread in the olive oil.

Roughly chop the tomatoes, cucumber, onion, pepper, parsley and garlic add to a food processor and blend till smooth. Add the soaked bread with the oil blend further. Season with salt, pepper and cumin. Add red wine vinegar to taste, and more olive oil if need be. Correct the consistency by adding iced water. Finally whisk in a little allioli.

Traditionally this soup is accompanied with bowls of diced pepper, cucumber, tomato, onion.

*Canned chopped tomatoes work very well for this soup

Notes on Allioli There are perfectly good ready made alliolis on the market. But if you prefer to make your own, here is a recipe.

Allioli is an emulsion of garlic and olive oil. I find the addition of egg yolks makes for an easier emulsion, and always make by hand.

4 cloves of Garlic

a little Sea Salt

2 eggs Yolks only

l Tbspn lemon Juice

l cup Virgin Extra Olive Oil.


Grind the garlic with salt in a pestle and mortar. Add egg yolks, whisk in the lemon juice and slowly the olive oil.
