How To Cook Goat Meat

I have no idea what possessed me to buy goat's neck the first time

. I wanted to make a Thai curry, and I thought that sounded exotic (though I don't recall in my many visits to Thailand seeing any goats or sheep). I had been a cook for a while and figured the meat would be tough, but two after two hours of cooking it and guests arriving, it was still as tough as rope.

All you have to do is think about it. What do goats do all their lives? They run around butting their heads into things and eating coconut husks. They're tough anyway, but they're bound to have very tough neck.

Since then, for cooking goat meat (which is well worth it- I actually far prefer it to mutton, which tends to get stringy), I have discovered that you need three hours of stewing for your standard cuts, and a full four for the neck. The neck is quite meaty though and produces and outstanding broth.

I never tried to cook goat Thai style since then, but I have put it into Caribbean stews and curries, barbecues, and sates. Whether such a thing as goat's head soup exists or not, I cannot say, but it wouldn't surprise me if it did. The meat is quite tough, though is stewed for awhile is much less demanding on the jaw.

The trick in barbecuing goat is in the slicing. I like to slowly cook over a low flame a large piece of marinated goat, and when it is done slice it into dozens of very thin strips for dipping. If one tried to eat a goat steak, it would take them a week and they would lose their jaw in the process.

It lends a whole new meaning to the phrase, "got your goat," doesn't it?
