This membrane is like a fibrous skin that will block the flavour of spices and marinades from penetrating the meat. If you are not at ease with trimming it yourself, ask your butcher for help to remove the membrane.
3.Prepare the grill. A gas grill will heat up faster and is easier to clean than a charcoal grill. However, a charcoal grill will impart a more smoky flavour.
