Sodium Nitrite (NaNO2) is a white crystalline inorganic compound best known for its use as a preservative in food industry. Apart from a preserving agent, the compound finds application in other industrial processes as well.

Medicine Researches have shown that NaNO2 has been efficient in treating life threatening medical conditions such as heart attacks, pulmonary hypertension (in infants), neural aneurysm, as well as Pseudomonas aeruginosa infections. Apart from this, the mixture of this compound is used in treatment of cyanide poisoning. Intravenous injection of the mixture has proven to be highly successful in the treatment.
Industrial Applications in the commercial production of organonitrogen, this compound plays a major role. As a reagent, it is used to convert the amines to diazo compounds (precursor to many a dyes). Nitrites are used for the production of Nitroso compounds (used in rubber manufacturing industry). Another major industrial application of this chemical is its use as an electrolyte (used in electrochemical grinding manufacturing processes) diluted to 10% in water. As an effective corrosion inhibitor, it helps in the manufacturing of industrial grease (as an additive). Apart from all this, it is also a useful heat transfer medium in aqueous form.
Food Additive the most popular application of (NaNO2) is in food industry. The compound appeared for its effective application as a food additive in the 1990s. As a food preservative,
sodium nitrite inhibits the growth of infectious micro-organisms in the food stuff, at the same time providing taste and colour to the non-vegetarian food stuffs. Another reason for this compounds high efficiency as an additive was the fact that it inhibits lipid oxidation (the major cause of rancidity i.e. spoilage of food-taste). The aforementioned benefits of this chemical led to improved food preservation practices as well as to improve the taste of preserved food. In fact, the chemical is approved for use as a preserving agent by the Europe, USA, Australia, and New Zealand.
All the above mentioned uses signify its role as a useful inorganic compound that has been the first choice for a number of industries. Well, there are other fields such as photography where Sodium Nitrite finds application, however not to a significant level.
