Italian Recipes For The Diabetic

The following are the ingredients for the Chicken Cacciatore for Diabetics.
1/3 cup of all purpose flour;
2 lbs of chicken thighs or drumsticks with the skin removed;
1/4 teaspoon kosher salt or sea salt;
1/8 teaspoon of freshly ground black pepper;
2 tablespoons of olive oil;
4 small carrots, peeled and cut crosswise into thirds;
3 celery stalks cut crosswise into quarters;
1 medium onion coarsely chopped;
8 cloves of garlic thinly sliced;
1/4 cup of tomato paste;
1 cup reduced sodium chicken stock;
1 cup of dry red wine or cranberry juice;
2 tablespoons of white wine vinegar;
6 medium plum potatoes coarsely chopped;
1 tablespoon of fresh or 1 teaspoon of dried thyme;
2 tablespoons of snipped fresh flat leaf parsley;
The cooking instructions are as follows:
The first step is to spread the all purpose flour in a shallow dish. Season the lean chicken parts with salt and pepper then dip the chicken in the flour to coat the chicken part. Heat the chicken pieces in medium high heat for about six minutes until the chicken parts are browned evenly.
With the retained fat in the oven, add carrots, celery, onion and garlic. Stir occasionally until all the vegetables are cooked evenly. Then add the tomato paste together with the broth, wine and vinegar. Cook to a boil then add tomatoes and thyme. Put in the chicken and bring the mixture to a boil. Once boiling, lower the heat and allow an hour for the mixture to simmer in low heat.
This recipe of chicken cacciatore is ideal for the diabetic because most of the carbohydrates as well as the sugar is removed from the recipe. The dish only has 407 calories and 13 grams of total fat broken down as 3 grams of saturated fat, 7 grams of monounsaturated fat and 2 grams of polyunsaturated fat. There are 109 mg of cholesterol, 600 mg of sodium, 30 g of carbohydrates. Overall, there is only 11 grams of sugar in the meal.
