When it comes to Middle Ages, the Italy dishes have already combined with traditions of Rome and Athens. However, Muslims invaded and brought spinach, almonds, rice and perhaps spaghetti. At that time, refrigeration did not exist, food was normally preserved naturally. Meat will be smoked, dried and kept on ice and salt is a good thing to preserve items. The content of recipe book at this time introduced a more refined and elegant cuisine.

By the early modern era, eastern spies and sugar were introduced and different cooking skills such as poaching, broiling, and grilling. In 17th century, the recipe book started to be translated into English. At this time, vegetables began to be considered as a main part of the meal not just accompaniments. To conclude, the early Italy cuisine has been largely influenced by Etruscan, ancient Greek, ancient Roman, Byzantine, Jewish and Arab cuisines, but after the New World was found, ingredients such as potatoes, tomatoes, bell peppers and maize were introduced. Until today, despite the cuisine has gone through variation and regionalization, what have not changed are the two main ingredients: cheese and wine.
