Rust stains can only be removed with a rust-removal product that is guaranteed to etch polished surfaces. You can send the material out to be repolished as a last resortfor dealing with etched marble. You'll get the luster back, unfortunately you will also have a slightly thinner countertop.
If you want to seal your marble countertop to keep oils and dirt from causing damage make sure the surface is clean. Try not to use wax. It can ruin your white marble, it will return yellow. Only use the stone sealer that is designed for marble and it will help reist dirt and oil.
Don't let wet dishes, glasses or water to stand longer on a marble countertop. Water can easily leak into the stone and leave a pemanent ring to remind ou where the water was. Marbles position can be changed by the causes and professional polishing is the only way to removed them.
