Marvelous Chocolate Oatmeal Cookies

What goes with Hot Chocolate better than an oatmeal cookie to dunk in your cup

? A chocolate oatmeal cookie of course! If you love to have a snack with your hot chocolate like I do, you are really going to love these.

This is an utterly wonderful recipe for chocolate oatmeal cookies. Though oatmeal cookies are not considered a cool, moden day snack by many, there's a reason that time-honored recipes survive over the decades. And this recipe proves it - sometimes old traditions are the best! Even the kids will want to get involved in making a treat that's easy to make and healthful, too.

Chocolate Oatmeal Cookies Recipe

-Preparation time: 10 minutes


-Baking time: 10 minutes

-Ingredients:

* 3/4 lb. semisweet chocolate chips

* 1/2 cup soft unsalted butter

* 1 egg

* 1/2 cup sugar

* 1/4 tsp. vanilla extract

* 3/4 cup all purpose flour

* 1/4 tsp. baking soda

* 1 tsp. baking powder

* 3/4 cup quick or old fashioned oats, uncooked

* 1/4 tsp. salt (optional)

-Cooking Steps:

1. Preheat your oven to 375F. Then you separate 1 cup chocolate chips from the rest and melt this in a saucepan over low heat. Set this aside. We'll use it shortly.

2. Beat the sugar and butter together in a bowl until smooth and fluffy. Then you add the melted chocolate you just set aside, the vanilla extract, and the egg.

3. The dry ingredients should be combined in another bowl. Now stir in the remaining chocolate chips and the chocolate mixture that you made previously.

4. Place rounded tablespoonfuls of the cookie dough on an ungreased cookie sheet and bake for 8 to 10 minutes as needed. When time is up check to see that they are done and then cool them for 1 minute on the cookie sheet before moving the cookies to a wire cooling rack.

Store Some cookies for Later

If you don't want to eat the cookies right away they may be frozen. To freeze the cookies, cool them rapidly to keep their freshness. All dairy and egg-based foods should be cooled in a refrigerator. Place the single-serving amounts in freezer-proof containers and seal tightly. If you prefer aluminum foil, wrap and fold the edges to seal each packet securely and place them on a flat surface to prevent cookies from becoming deformed.

Place the cookie containers in freezer until they are quite frozen. Once the cookies are safely frozen, the flat surface you used to help them keep their shape, such as a cookie sheet or plate, can be removed to save freezer space. The cookies will stay fresh in the freezer for up to 2 months. When it is time to eat the stored cookies you simply unwrap them. But before unwrapping, you should make sure that they are thawed out completely at room temperature.
