We are all getting ready for Spring. Lose those 20 pounds we gained over the winter. Plus maybe lose another 10 pounds to fit into the favorite Jeans of yours. They say March is National Nutrition Month. What timing. Some are into March Madness, and some are into getting their cholesterol down, or both. Cholesterol Damages and clogs the arteries, it plays a life-giving role in many functions of the body. As much as this family here loves to BBQ out, I've decided to just cook vegetables on the grill for dinner one night a week. Fresh carrots wrapped up in tin foil with a little low fat butter. How about some fresh green beans also, add some fresh garlic to it also. Corn on the Cobb I suggest using the old method I grew up with. Remove the silk but keep the husk on. Soak it in salt and sugar for about one or two hours, then throw that on the grill. Make it your favorite, or if you want a little starch, take a red potato and cut in up in four pieces. Last of my favorites is bell pepper and onions, sliced and sauted on the grill. You could marinade the vegetable for about 10-15, or brush them with olive oil. One of my favorite marinades is olive oil, lemon juice and crushed garlic. If you want to replace oils all together, trying using a low-fat cooking spray. They say a glass of red wine can be good for you. I just happen to make it a big glass. There is nothing like hanging out on the patio, grilling your vegetables to make a person relax. Just think how cool you will keep your house in the summer from not cooking on the stove.
