Conferences and business events are places where participants want to look and feel their best. Make sure that the food you serve is easy to consume and can be consumed neatly. Nobody wants to end up with spaghetti sauce on his or her white shirt, or with barbecue sauce dribbling down their chin, especially when you're trying to impress a senior executive seated at the same table.
Organizers want their participants awake and alert for the entire duration of the event or conference. It's important that you don't serve food that could make your participants drowsy or feel heavy and fatigued. It's also a good idea to serve coffee or tea and refreshments throughout the entire day. You can place the refreshments table in the back of the room or in an adjoining hall to prevent people from being distracted by servers.
If you're expecting participants from a wide variety of different locations, it's important that you are sensitive to their dietary needs. The most common restrictions are for vegetarians, vegans, and those with food allergies. Make sure you have a vegan or vegetarian option to satisfy those that might not eat meat. Also do some research on the most common food allergies and try to eliminate potential allergens from the menu.
Another potential problem is cultural or religious dietary requirements. If your participants include delegates from other countries, it's important that you serve food that everyone will be able to eat. There are some cultures and religions that prohibit the consumption of pork or beef. Although it's impossible to cater to everyone's needs, at least serve food that you're reasonably sure almost everyone can consume.
Strong flavors may be great for a dinner, but at a business event, it could mean bad breath and other unpleasant odors. Make sure you eliminate potential causes from the menu.
