Reheating Pizza - How To Get It Right
It's entirely possible that there exists a method of reheating pizza that will perfectly
return it to that fresh, golden state in which it arrived at your door. So far, this method has eluded even the best chefs, however. There's no question about it: the usual methods of reheating America's favorite Italian export leave something to be desired. The microwave might be the perfect place to reheat a plate of macaroni and cheese but it will ruin that slice of pie that was so good last night. While the best way to eat your leftovers may always be cold (and this is really the best way to separate an "alright" pie from a great one), here are some tricks that will heat it up in the best way possible.
Small Portions
If you're only aim is to heat up a couple of slices, you'll probably get your best results from a toaster over. Toaster ovens aren't good for much beyond toasting bread, but they certainly come in handy with pizza. Set the gauge somewhere between medium and dark and a couple of slices should get you right where you need to be. Another idea is to use a skillet. Heat the pan to medium-high and drop your slices onto the surface. For best results, cover the food while it cooks. Two or three minutes should suffice.
Larger Portions
If you want to cook more than one or two slices, you'll need to turn on your oven. This is the technique most people use with various degrees of success. One of the biggest reasons for failure is cooking with the temperature too low. This is not a job for the default 350 degree setting. Crank your oven up to 450. Then put your pizza in, right? Not at all! This is where people go wrong. Just put a foil-lined cookie sheet into the oven for a few minutes and let it get hot. Only then can you add your slices. This will give you a much better crust and it might even rival what you got from the restaurant in the first place.
Other Options
If you are ready to take reheating your leftovers to the next level, you might consider buying a pizza stone. This is specifically made for just your purposes and you might get better results from your oven if you use one. Some restaurants will provide special packaging, in which you can reheat the pie the next day, but these seldom produce results much better than what you could do on your own. And of course, eating it cold is always an option (and one that shouldn't be quickly dismissed).
