Thai Coconut Mango Pudding Recipes

If you notice, most of Thai cuisine recipes are using coconut milk as the ingredients. Thai coconut milk is made from fresh coconut meat and is used in the making of curry, soup, baked, sauce, and even a dessert. This article will reveal the making of one of the common dessert in Thai that also using coconut milk as the ingredients.

Can you imagine the sweetness of a ripe mango? Then imagine if it's combined with the taste of fresh coconut milk. Then imagine again, if it served chill, in the shape of a pudding. Imagine the sweet, fresh, and cold sensation in your mouth. Very tempting, isn't it?

Then you should try this recipe!


Ingredients:

1 large mango

150 g of rice glutinous

50 cl of coconut milk

150 g of sugar brown powder

with this ingredients, you will have enough pudding for 4 persons. Each person will get a small bowl or cup of this sweet, fresh, and cold coconut mango pudding!

Here comes the step by step, it is very easy and quick.

Preparation: 15 minutes

Cooking time: 35 minutes

Rest: 60 min

Total time: 110 minutes

How to make "Coconut Mango Pudding":

1. Soak glutinous rice in cold water for 1 hour.

2. Drain the rice and pour into a saucepan. Water it in 3/4 of a liter of cold water and cook 20 minutes to simmer from boiling. When cooked, the rice should be very tender and water absorbed.

3. Drain the rice, pour into a bowl. Stir in 4 tablespoons of coconut milk. Mix well and chill.


4. Pour the remaining coconut milk in small saucepan placed over low heat. Add sugar, stir and bring to boil. Boil about 15 minutes to obtain a smooth result. Allow to cool. Remove the core and the skin of the mango, cut flesh into small dice.

5. Divide rice in small bowls, top with diced mango and sprinkle with coconut syrup. You can serve it now, or put it in the refrigerator for a couple of hours before serving.

Another alternative is to keep the pudding with the mango topping in the freezer. After a couple of hours, take the frozen pudding out, pour it with the coconut syrup and voila! Sweet, fresh, and cold sensation in your mouth at once!
