Choosing the Right Juice


If you are making your own wine from wine juice for the first time, then you must remember that wines are named after the grapes they are made from. So, you must apply the same nomenclature when making homemade wine from juice. If you are brewing red wine, then name it Merlot, Zinfandel or Cabernet Sauvignon, similarly for white wines, the names can be Chardonnay, Sauvignon Blanc or Riesling. Usually these wine juices come in five gallon pails and have already been sulphated for sterilization. Yeast has also been added to them. When these juices reach you, fermentation is already in process as the juice will have a slightly wine-like scent and the taste will be that of very mild champagne.

The Process of Turning Juice into Wine


As said before, working with concentrate it is a very quick and easy way to make a batch of wine. The task is simply a matter of pouring the concentrate into your wine fermentation vessel. Then add water, wine yeast and other ingredients as per the given directions. This means that you must transfer the juice to sterilized, five gallon carboys, leaving about three inches of headroom at the top. You must remember to put the air trap in place and leave it for about a month. Another option open for you in the home wine making process is to use the plastic pail as it also works great for primary fermentation. In the pail, leave room for expansion so it doesnt overflow. Make a schedule to follow for a week- where you will open the pail once a day and stir the juice with a plastic spoon or clean ladle. When you will replace the lid, always leave it a little loose for the gases to escape. As you wait for the fermentation to slow, get ready for the next task- which is to transfer the juice to the carboys and placing the air traps.

Racking the Wine

After a period of 4 weeks, there will be sediment deposited in the bottom of the carboys. Then you need to rack the wine to a second sterilized carboy, without transferring the sediment. Repeat the racking process every three months until finished.
