Trim and tort the layers to ensure evenness and balance - this means a good knife and steady work surface (such as a turntable) are necessary;


Master the different icings, frostings, and coatings - this implies that a range of spatulas of varying sizes, piping bags, and decorator tips will need to be added to the list of accessories; and

Learn to apply any base layers in a flawless manner - this is usually done with a specialty spatula, but some bakers find that everything from rolling pins to icing bags can be useful for such tasks too. What all of this information means is that a basic set of tools will have to coordinate with the steps just itemized above. So, we know that a good cake decorator is going to need:

A very sharp and reliable bread knife that is capable of cutting through the layers of cake evenly and in a controlled way;

We also know that they will need spatulas suitable to spreading the different frostings and icings too;


We understand that mastery of these different coatings will require a range of icing colors and decorating tools (including bags, tips, spatulas, and rolling pins to handle fondants) as well;

Finally, we understand that it is always a good idea to have a handy tool for holding the layers as they are decorated as well, and this usually means a turntable or cake stand with a rotating top.

This makes it easy to see that you don't have to go out and "break the bank" in order to get the basic tools for mastering cake decorating. As you begin to define your personal style and master the different piping techniques, you may decide to invest in specialized gear such as stencils and presses or extra tips for piping special figures, but until you really do understand your own personal style you should hold off on the more costly accessories.
