Why you should level mining:
This profession is very hot right now; if you are not 525 by the end of this week you might as well just toss in the towel in playing WoW. Everyone and their mom is trying to get their hands on metal bars to level up professions, but the demand is extremely high for gems, tinker, raid gear, and pvp gear. While the craze may fizzle out in a month or two, you can expect to make plenty of gold throughout cataclysm as a miner.
Mining leveling guide:
Even though Azeroth's landscape has changed leveling mining is still a breeze.
1-65: Hit Dun Morogh for Alliance and good ole Durotar for the Horde for Copper
65-125: You can go to either Hillsbrad Foothills or Northern Stranglethorn for Tin
125-175: Head to Western Plaguelands or Feralas for Iron and Gold ore
175-230: Go to Burning Steppes or Felwood for Mithril and Truesilver
230-300: fly to Winterspring or Un'Goro for your Thorium.
Now that the crazy Cataclysm is out the way (for now) it will be back to business as usual.
300-325: Hellfire Peninsula for Fel Iron
325-350: You can find Adamantite in Nagrand
350-400: Fly around Borean Tundra or Zul'Drak for Cobalt
400-425: Scholazar Basin is the place to be for Saronite.

425-475: You can find Obsidium ore in Mount Hyjal or Vashj'Ir
475-525: You will be able to find Elementium ore in Either Twighlight Highlands or Deepholm.
