The basis of Vietnamese meals is usually rice. Rice is almost always served with a meat dish or vegetable mix. Traditionally, each person served with have a bowl of rice and the main dish will be shared. Vietnamese and Chinese dishes are similar, but still have many differences. The primary difference between Vietnamese and Chinese food is that Vietnamese food is much lighter and uses a fish sauce for seasoning.

Vietnamese food is full of flavour using many different seasonings including lemongrass, curry, ginger, onion, vinegar, garlic, cilantro, mint, basil, sugar, fennel and coriander. The goal of a Vietnamese cook is to create a balance of spice, sweet, bitter, salt and sour into something delicious. The majority of Vietnamese meals are vegan; however, there are plenty of meat dishes.

The dishes throughout Vietnam are different based on the region. For example, northern Vietnam doesnt use as many spices and uses vegetables that are available in their colder weather, which include daikon, radish, and broccoli. South Vietnam uses more herbs and the dishes tend to be quite a bit sweeter. It is more common for restaurants around the world and in the United States to borrow from the south custom. Central Vietnam focuses primarily on seafood dishes.

The most popular Vietnamese dishes include Bun cha, Mi xao don, Mi bo vien, Bun oc, Com gar au thom, and Bahn bao. These dishes range from an egg noodle soup with meatballs, vermicelli noodles and a meat of pork, chicken or even sea snails. Dumplings are even popular in Vietnam. You can expect almost every dish of Vietnamese cuisine to be served with vermicelli noodles or with white rice to accompany your meal.

The coffee in Vietnam is often favoured by the tourists who visit. The coffee is traditionally served hot or over ice. The coffee is intense and used from delicately roasted beans. The roasted beans are ground coarsely and not too fine as you would expect with a cappuccino, and brewed with a drip filter. The Vietnamese make one cup of coffee at a time, so each cup retains the most flavour. Coffee is most commonly consumed black, with milk, or with milk and ice.

Vietnamese cuisine has a taste to offer everyones different preferences. You can expect it to be light, aromatic and healthy. Vegetarians and meat lovers both enjoy Vietnamese cuisine. If you are unable to go to Vietnam, you should at least try Vietnamese restaurants in your local city. You and your family might find it is your next favourite place to dine.
