What Are The Different Types Of Cheeses?
Cheese is perhaps one of the most versatile types of food out there

Cheese forms from the coagulation of the protein casein in milk. But, what is it that makes each cheese different? While the basic component milk is inherent to all cheese, the addition of certain enzymes, aging, treatment, and milk source are what decide the end flavor of the cheese. The addition of woods and certain spices are sometimes used to treat cheeses to change the flavor and taste during curdling.
Yellow and red cheeses are created by adding annatto, but other acids can be used such as lemon juice or vinegar. Rennet is most commonly used to complete the curdling process, but for those who prefer vegetarian cheeses, certain fungus can be substituted.
Different cheeses: Asiago, bleu, cheddar, daisy, enchalido, fontinella, gouda, horseradish, jack, lactose free, mozzarella, parmesan, queso blanco, rice cheese, soy cheese, toma, velveta, and yogurt cheese.
These are just a few samples, and they dont even cover the variations that each has, such as cheddar which has about fifteen different variants, such as sharp, mild, and medium. The versatility of cheese becomes clear when theres a different cheese for just about every letter in the English alphabet. In all, the International Dairy Federation claims over 500 different varieties of cheese, which means theres always a new taste for your next meal.
Texture and taste vary according to what source the milk came from, such as goat, cow, or sheep, and the process by which it is curdled. Most cheeses are soft and melt easily when cooking while some are firm which tend to last longer and age well. Firmness is created according to the moisture content in the cheese, which is often determined by the packing pressure when being molded. But for the most part, all cheeses are best prepared or served at room temperature.
For those that prefer a 100% vegetarian alternative to cheese, soy cheese has grown in popularity. Soy milk is used to replace regular milk products, and can be used to create many of the same cheeses, such as mozzarella and cheddar. Additionally, it is often much softer and is great for cooking.
