Simply put, green tea is manufactured from a single strain of tea plant, specifically the Camellia Sinensis. It is harvested early to avoid oxidization, but can vary greatly owing to differences in climatic conditions, harvest time, and soil quality. All of these variables can add a distinct flavor to the beverage.

Known to the Chinese as a general health tonic, green tea has recently become the subject of scientific research owing to its properties of fat burning or "thermogenesis" and its ability to reduce the risk of heart disease and certain types of cancer. These properties are still the subject of considerable debate.

Green tea is also commonly known as "Japanese tea," owing to its popularity in Japan. However, it was first brewed in China during the reign of the Song dynasty, and introduced to Japan by a Buddhist monk, Myoan Eisai.

Tea varies in price according to which portion of the plant is processed, as well as the overall quality and health of the plant. Regionally, some teas are regarded as more valuable than others, but ultimately this is a matter of personal preference.

Tea carries with it important cultural and regional significance, so much so that often times low grade teas are inappropriately branded with a manufacturers stamp to indicate that they are of higher quality than they in fact are. This is especially prevalent in the distribution of "Dragon Well" style tea, produced only in Hangzhou province. Also known by its common name "Longjing," most of this tea is in fact counterfeit and produced in Sichuan province.

Green tea is growing in popularity in the Western world, due to its purported health benefits and subtle flavor. Coffee is still widely consumed in most Western countries, but as tea continues to gain adherents it has established itself as a primary caffeinated beverage.

Ongoing research on the anti-oxidant properties of tea suggest that moderate consumption is healthier than equal amounts of caffeine consumed in coffee form. Green tea may even help prevent conditions as diverse as obesity or age-onset dementia. Although no current clinical data exists to firmly support these claims, many insist that tea is a legitimate benefit to overall health.
