Yinzhen is a common or abbreviated title of Bai Hao Yinzhen. This type of white tea is mostly cultivated in the Fujian Province of China. The white teas are much closer to the natural as they are less processed and dried in air or they are sun dried, although presently the producers have started using very hot air to speed up the process of drying. The other teas are rolled green whereas the white tea is not rolled until it is fully dry. Traditionally they are plucked at the commencement of spring season like early March and then from 15th March till 15th April the buds are air or sun dried. White teas are neither rolled nor thinned out, until they are totally dry of moisture, whereas on the contrary the green teas are rolled and fired to stop any more oxidation. The process of rolling includes the slight breaking of the leave's cellular structure in order to allow some essential oils to be released and promote oxidation.

The Yinzhen is picked when the buds still are firmly enclosed in freshly grown leaves. The fresh leaves are recognized by the silky white hairs on them.
