Non Profit Organization Mexico, Orphanage In Mexico

In broken English, a 13 year boy asked if he could draw me a picture. I sat with him as he sketched a superhero figure he had seen on TV. He was amazingly talented and drew with great detail and passion. When he was finished he smiled, gave the picture to me and proudly said For you. Welcome! It was my first day volunteering at Casa Hogar Los Angelitos (CHLA) in Manzanillo, Mexico. The orphanage has over 50 children and is registered as a Mexican...more

France Invades Mexico

If you tell people that Mexico was twice a monarchy, they might be surprised; it's not necessarily a well-known fact. In the 1860s, after a lot of strife, the pro-democracy liberals and the pro-monarchy conservatives seemed to be at an impasse. Then, just as things looked up, the conservatives helped a foreign power invade and put a monarch on a false throne.Benito Juarez became Mexico's president in 1861, after civil and international wars had...more

The Native Cheeses Of Mexico

Mexican cuisine is overwhelmingly popular all over the world, and especially in North America. There are very few people out there who haven't tried a taco or gotten a quesadilla for lunch; the simple flavors and fresh ingredients have near-universal appeal. While most people know that nachos are not an authentic Mexican food, they may not realize that their sharp cheddar cheeses are equally as foreign. If you're looking for truly authentic Mexican tastes, you'll have to find some of these local cheeses.Mexico ranks 10th in the world for cheese production, and is eighth highest in consumption each year. The production of most Mexican cheese is usually carried out on a small scale, using cow's milk only. No one knows exactly how many native varieties actually exist; there is no standard for naming or registering a variety, so a cheese made in Jalisco may have a different name from an identical recipe in Nayarit--or two different names, applying to the same product. The local cheese makers also tend to use unpasteurized milk, which has presented problems in the past. Nonetheless, there are several commercially available Mexican cheeses that are popular among the locals.Queso fresco,...more

Hernan Cortes Before Mexico

If you have a passing knowledge of Mexican history, you might know Hernan Cortes. He was the man who finally conquered the Aztecs and established colonial Mexico. However, who was he, and how did he end up sailing to Veracruz in 1519? Here's the first part of his story. The family he was born into in 1485, had modest means but noble blood. His father, Martin, was an infantry captain with a well-regarded ancestry. Hernan was distantly related to several men who would play a role in exploring the Americas: none other than the conqueror of the Incas, Francisco Pizarro; and Nicolas de Ovando, the third Governor of Hispaniola. Cortes was a sick, pale child, often spending his days indoors with books. When he was 14, Cortes went to the University of Salamanca, one of the country's most prestigious learning centers. He gave up studying Latin and law after only two years, and returned home. Cortes' decision to abandon school was greatly disappointing for his parents, who'd hoped that the boy would go into work as a lawyer. But he was restless, frustrated at the confines of his small town, and unsure of what he wanted to do--essentially the prototypical teenage kid. News of Christopher...more
