These two vegetarian salad recipes provide a wide spectrum of nutrients and taste great too. Add these flavorful salads to your diet for a healthy and zesty change of pace.

5 Bean Salad

Ingredients:

1 can of cooked mixed beans (kidney, garbanzo, pinto, etc.) rinsed


2 stalks celery, finely chopped

1/4 purple onion, finely chopped

1/2 green pepper, finely chopped

1/2 red pepper, finely chopped

1 green onion, finely chopped

3/4 cup cold-pressed flax seed oil

1/3 cup apple cider vinegar

1/2 teaspoon Celtic sea salt

1 Tbsp pure maple syrup

1/2 tsp basil

1/2 tsp thyme

1/2 tsp oregano

Dash of cayenne pepper

Directions:

Mix the beans and vegetables together in a bowl. In a jar, whisk together the flax seed oil, apple cider vinegar, sea salt, maple syrup, basil, thyme, oregano, and cayenne pepper (this is your dressing). Pour half the dressing over the bean and vegetable mixture. For the best taste, let it marinate for a few hours. Store the remaining dressing in the jar and keep refrigerated for later use.

This salad is especially great because it provides a lot of protein, fiber, and omega-3 fatty acids. There are also a ton of phytonutrients in the vegetables and apple cider vinegar. You really can't beat this salad for a healthy, low calorie meal!

Asian Rice Salad

Ingredients:

1/2 cup almonds, chopped and soaked in water overnight

2 cups cooked brown rice

3/4 cup chopped celery

3/4 cup chopped red pepper

1 green onion, chopped

Large handful of fresh parsley, chopped

Dressing:

1/4 cup extra virgin olive oil

1/2 Tbsp wheat free tamari

Dash Celtic sea salt

Directions:

Mix almonds, rice, and vegetables together in a bowl. Pour dressing over salad ingredients to taste and serve!

This Asian Rice Salad is fantastic because it supplies plenty of monounsaturated fats from the olive oil and almonds. Almonds and brown rice also supply fiber and a full spectrum of b-vitamins. Enjoy!
