In the Mediterranean people use olive oil a lot in the cooking of food. As a general rule most virgin pressed oils are not suitable for cooking as their molecular structure reacts in a volatile way when heated in high temperatures. Virgin olive oils have wonderful flavours and aromas that are unique to the type of olive used and this depth of flavour makes it perfect for drizzling over salads, pasta, bread and cooked dishes.

For cooking the best oils to use are sunflower or rapeseed oil. Both these oils are high in vitamin E and omega 6 fatty acids. In particular, rapeseed oil also contains the fatty acids omega 3 and 9 as well as the healthy mono and poly-unsaturated fats. These two oils are perfect for cooking as their molecular structure remains stable during high temperatures.


As the nutritional benefits of cooking oils become widely known, obscure oils such as avocado oil or now becoming popular. As a general rule keep the more expensive virgin oils for drizzling on your salads and bread. For example, avocado oil has quite a distinctive, strong flavour and is dark green in colour. This oil is also high in vitamin E and is said to have a beneficial effect on helping to lower cholesterol levels.

The flavour of the avocado oil works very well by adding it to chicken and fish dishes and tastes delicious with roasted vegetables. You can also cook with this oil as it remains stable at high temperatures however, because it is quite expensive it is best to keep it for special occasions.
