How Do Digital Pressure Cookers Work?

, can become the star of your kitchen because they really can displace several appliances in your kitchen and cooking arsenal. Think of all the money and space you will recoup! However, the biggest benefit to a digital pressure cooker is clearly the reduced cooking time. When you use a digital pressure cooker rather than standard cooking methods, you can cook very wholesome and healthy, delicious meals, and save up to 70% of the time it would take to cook conventionally!

But you want to know how digital pressure cooker actually works...and further, what is it about pressure that creates such an optimal cooking environment at all?

First things first-take out your digital pressure cooker, and put the food in the bottom compartment of the cooker. Looking at it, the bottom of the appliance is just a heavy pot. It differs from a regular sauce pot, as the digital pressure cooker pot has little notches along the edge. A sauce pot, by comparison, has a smooth surface on the rim.

You will notice that the notches in the bottom match the grooves in the lid of the digital pressure cooker. Usually, when the food is in place, the recipe will call for adding liquid to the pot. The liquid is the secret ingredient, making the digital pressure cooker function.


OK, so now the food as well as the liquid are both in the digital pressure cooker. Fasten the lid to the base (mount at a 30 degree angle facing away from the handle), then rotate the lid until you feel it all lock up. You'll feel the gasket in the lid that forms an airtight seal between the top and bottom of the digital pressure cooker.

As the temperature rises in the digital pressure cooker, the liquid approaches a boil...steam is created here. Now, the steam has nowhere to go, due to the airtight gasket...now we see how a digital pressure cooker works.

Let's talk about pressure for a moment: Pressure is measured using pounds per square inch, or PSI. Most items cooked this way are obviously under high pressure, resulting in about 250 degrees Fahrenheit, which far exceeds the 212 boiling point of most conventionally cooked foods...

Now, how do we know if this whole high pressure, high temperature process is safe? If you believe the crazy stories offered by some, you would shy away from it and the stories of explosions and violence they tell...

Just know that these stories are legends. At least those in the past 50 years are, anyway...user error, not the fault of the equipment, is the cause of any stories you DO hear...

These cookers are safe to use and well made. Pay attention to the manufacturer's directions and use your common sense...Today's digital pressure cooker is reliable, durable and does NOT blow up!
