Understanding Ham
Pork is not a favorite in the East alone
Pork is not a favorite in the East alone. Pork chops and pot roast are common in the west, and loved as well. Ham is usually the thigh meat of a pig or a boar. Its lean and perhaps the most demanded for as well. Recipes that use ham as the main ingredient are in abundance today, but their success lies with the knowledge of preparing ham. It takes some skill to be able to create a mouthwatering dish out of ham, and hopefully this guide should start you off.
Ham is either sold fresh or cured. Fresh cuts of ham are not what you would ordinarily expect to find in the store, but they are available nonetheless, usually in a frozen state. What that means is defrosting, or thawing as the more preferred term, needs to be done. The best approach to this is not with the defrost button in your oven, but with the refrigerator. Set it at 40F, and let your ham slowly melt away its ice. If you dont have the patience, then you could use the cold water method. You simply seal it in a leak-proof bag, then place in water for thirty minutes. Change the water during the intervals to achieve total thawing.
Cured ham is preferred because it contains much more flavor. This is owed to its ageing process which takes anywhere from a couple of months to a couple of years. The important thing to remember is to reintroduce moisture during the cooking, since most of it escapes during the processes of curing.
Once the ham is ready for cooking, the hard part is over. The traditional method of preparing ham is by baking it. The question of how long you do this for has different answers mostly because some ham is partially or wholly cooked before its sold. Customize your baking, by say, glazing it using honey or wine, or making a casserole.
If you have some leftover harm, the worst thing you can do is dispose of it. It comes in handy when you want to whip up some quick sandwiches or make a casserole. But you need to refrigerate it when you are sure of using it in a dish again. Do this for one week tops. The ham is not only the leanest cut, but arguably the most succulent one as well. You wont put on weight by enjoying one serving of ham. Instead, it will cover for your daily sodium requirement.
